Our neighbors, Corky & Sylvia, have been keeping us in fresh out of their garden cucumbers all summer. We needed to find lots of ways to use them. These pickles are delicious and very easy to make. Give them a try and share the recipe with all your gardener friends.

6 cups cucumbers sliced thin
One red pepper cut into strips
1 jalapeno pepper seeds out sliced thin (optional)
1 tablespoon sea salt
1 1/4 cups white vinegar
2/3rd cup water
1 1/2 teaspoons dried dill
1/2 teaspoon celery seed
1/8th teaspoon cayenne pepper
2/3 cup sugar
Combine cucumbers, red pepper and jalapeno (if using) with sea salt.
Let sit for 1 hour.
Mix remaining ingredients in sauce pan and heat to a boil dissolving sugar.
Pour over cucumber mixture and allow to cool, cover and refrigerate for 24 hour.
