Sesame Poppy Seed Spinach Salad with Glazed Salmon Fillet

Recipe of the Month – August 2020
This summer salad paired with the glazed salmon fillet is the perfect light dinner or lunch for these hot August days.
To good times with great food,
Ingredients:(Sesame Poppy Seed Spinach Salad)1/2 cup olive oil1/2 cup brown sugar1/4 cup white balsamic or prosecco wine vinegar2 tbs. sesame seeds1 tbs. poppy seeds1/4 tsp. paprika (Glazed Salmon Fillet)2 1/2 to 3 lb salmon filletSoy sauce for rubbing the salmon
Preheat broiler. Rinse and pat salmon dry.
Arrange salmon, skin side down, on a foil-lined jelly-roll pan and rub thoroughly with soy sauce.
Season salmon with salt and pepper and broil about 4 inches from heat for 12-15 minutes, or until just cooked through.
While salmon is under the broiler, whisk all salad ingredients together thoroughly.
Toss dressing into spinach.
*Hint: add additional salad toppings as desired (toasted almonds, peaches, avocado, berries of your choice, etc.)
