Summer Spinach Salad

Salads: Summer Spinach Salad

This salad is great for the summer combining berries, red onion, gorgonzola cheese and avocado with caramelized pecans and a Dijon vinaigrette.

Dijon Dressing:

2 tablespoons sugar
¼ cup olive oil
¼ cup white wine vinegar
1 tablespoon Dijon mustard
2 pieces of garlic, minced
½ teaspoons salt
¼ teaspoons fresh ground pepper
¼ teaspoon paprika

Combine in plastic container or jar and shake well.

Caramelized Pecans:
1 Tablespoon butter
1 Tablespoon brown sugar
1/2 cup pecans
1/4 teaspoon salt

Melt butter and add the sugar and salt Add pecans and cook stirring for 3 to 5 minutes until caramelized.
Salad: Portions based on number of guests and personal preference

Fresh spinach, remove stems
Red onion
Gorgonzola cheese crumbled

Mix the salad ingredients together, toss with the dressing and top with the pecans.
