Shrimp Wrapped in Bacon with Bleu Cheese & Rosemary

Appetizers & Sorbets: Shrimp Wrapped in Bacon with Bleu Cheese & Rosemary
Serves: 10

20 uncooked large shrimp, peeled & de-veined
1 tbs chopped fresh rosemary
Balsamic vinegar
10 bacon slices, cut in half crosswise
crumbled bleu cheese
ground black pepper

Place the shrimp on a baking sheet and sprinkle with the rosemary, black pepper and splash with vinegar. Wrap each shrimp with piece of bacon and secure with a wooden toothpick. (Can be made up to 8 hours ahead, covered and chilled). Preheat broiler. Place 4-5 inches from heat source and broil about 5 minutes, turn and broil another 5 minutes. Make sure they do not burn. Remove toothpicks and place on plates and sprinkle with crumbled bleu cheese.
