Shrimp and Mango Salsa in Wonton Cups

Appetizers & Sorbets: Shrimp and Mango Salsa in Wonton Cups
Serves: 12

24 small wonton wrappers
Olive oil for brushing
1 pound (30-40 count) shrimp, cooked, peeled & deveined
1 ripe medium mango, peeled, pitted & chopped
2 -3 garlic cloves, minced
1 cup packed fresh basil leaves, minced
1/4 cup packed fresh mint leaves, minced
3/4 cup extra virgin olive oil
2 tbs lime juice
fresh lemon juice to taste
salt and ground white pepper to taste

Cut wontons in half on the diagonal

Spay miniature muffin cups with nonstick cooking spray. Press 1 wrapper into each cup and brush lightly with olive oil.

Bake at 350 degrees for 7-10 minutes or until crisp.

Remove from muffin cups.
Set a side 12 of the shrimp for garnish. Chop the remaining shrimp and combine with all the remaining ingredients, mix gently and spoon into wonton cups.

Cut the shrimp for garnish into halves lengthwise. Place one on top of each cup.
