Grilled Beef Tenderloin with Mango Salsa

Entrees: Grilled Beef Tenderloin with Mango Salsa
Serves: 10-12

1 5-6 pound beef tenderloin
1 cup white wine
1 cup soy sauce

Beef tenderloins come packaged whole or sometimes just the larger end. Select a grade of Choice or better, trim tenderloin of excess fat and sinew. If whole, cut in half to fit one half in a large ziplock bag. To each bag add the soy sauce and white wine and the beef. Marinate overnight in refrigerator. Remove from refrigerator 1 hour before grilling. Grill over medium heat for approximately 45 minute of until medium rare. Allow to rest for 15 minutes before carving. Serve topped with mango salsa.

Ingredients Mango Salsa
½ cup hot jalapeno jelly (or red pepper jelly)
3 tbs fresh lime juice
2 ½ cups chopped peeled pitted mango
1 ¼ cup chopped red bell pepper
¾ cup chopped red onion
1/3 cup chopped fresh cilantro
1 jalapeno chili, minced

Whisk jelly and lime juice in large bowl. Mix in all remaining ingredients. Season with salt and pepper to taste. Can be made several hours ahead. Cover and chill.
