Soups: Curried Red Lentil Soup
6 cups chicken broth
4 cups water
1 onion chopped coarsely
1 pound bag red lentils
2 tbs olive oil
½ to 1 tsp curry powder depending on taste
Mix all ingredients in stockpot and bring to boil, simmer partially covered for 40 – 45 minutes. Puree with stick blender until smooth. Mix in olive oil and curry powder. Puree again. Cool and then divide into containers. May be frozen.
