Soups: Carrot Soup

2 tbs butter
2 tbs olive oil
2 medium onions, chopped
1/4 tsp ground ginger
1/8 tsp ground mace
10 medium carrots, chopped
8 cups chicken broth
1 tbs grated orange peel
salt & pepper to taste
fresh chives to garnish

Melt the butter and oil in a large pan over low heat. Add onions and cook, sitrring until wilted, about 15 minutes. Sprinkle with ginger and mace and cook stirring, 1 minute. Add the carrots, broth and orange zest, reduce heat and simmer, partially covered, 20 minutes. Cool slightly. Puree in food processor. Return to pot and stir in salt and pepper. Heat over low heat. Garnish with fresh sniped chives.
