Accompaniments: Asparagus with Gremolata Butter
2 tbs butter
2 pounds peeled asparagus
2 tsp grated lemon peel
1 large clove of garlic minced
2 tbs fresh lemon juice
1 tbs chopped fresh Italian parsley
Cook aspargus in in boiling salted water until just crisp-tender, about 4 minutes. Drain and rinse with cold water and drain again. Melt butter in large heavy skillet over medium-high heat. Add lemon peel and garlic and stir 30 seconds. Add asparagus and toss to coat. Sprinkle with lemon juice and saute about 3 minutes until asparagus is heated through and coated with butter sauce. Season with salt and pepper and sprinkle with parsley.
